Ingredients for Shahi Paneer –
Paneer (Cottage Cheese) – 250 gms
Onions – 3 nos
Tomatoes – 2 nos
Green chilli – 2 nos
Cashews – 15 nos
Soaked Almonds – 10 nos
Lukewarm full cream milk – 200 ml
Refined Oil
Butter
Coriander for garnishing
Red Chilli Powder
Cream – 1 tsp
Clove – 2 nos
Cardamom – 1 nos
Black Pepper – 5-6 nos
Cumin Seeds – 10-15 nos
Bay Leaf – 1 nos
Cinnamon – 1 nos
Garam Masala
Salt
Turmeric Powder
Method to make Shahi Paneer –
First of all chop onions, tomatoes and green chillies. Add 3 tablespoon of oil to your frying pan. When the oil heats up add chopped green chillies, onions. When the onion starts to change its colour to a golden brown then add tomatoes to it. Let it cook for 5 – 10 minutes. Turn off the gas and empty the frying pan. Take all these stuff and grind them to make a fine paste. Now in a different jar grind cashews and soaked almonds to make a fine paste and keep them aside.
Now again take a frying pan to add 3 tablespoons of refined oil and 1 tablespoon of butter. When butter starts to melt and oil is warm add cloves, cumin seeds, bay leaf, cardamom, cinnamon and black pepper to it. After 30 seconds add fine paste of onions and tomatoes to the frying pan.
Also add 1 teaspoon of Turmeric powder, 1 teaspoon of red chilli powder, 1 teaspoon of garam masala and salt according to your taste buds and cook it till oil starts to leave the surface. Now add cashews and almonds paste to it cook it for again 2-3 minutes.
Now, this is the time when you have to add lukewarm milk slowly to the mixture in the frying pan. While adding milk, make sure you are continuously stirring the mixture in order to avoid any lumps.
Now let it settle and with the mixture. Now when it starts to boil or the mixture starts forming bubbles this is the right consistency and time to add diced Paneer(cottage cheese) to the mixture. Cook it for another 2 – 3 minutes and it is ready to serve.
Garnish the dish with coriander, cream and butter and your yummy shahi paneer is ready to dig in.
